Dr. Joycelyn Quansah is a senior lecturer at the Department of Nutrition and Food Science.

Dr. Quansah holds a PhD in Food Science from the University of Georgia, USA. Her research interest includes enhancing food safety and quality, impact of agri-food systems on food security and nutrition, and exploitation of bioactive compounds in food.
She is a member of several organisations such as the International Association for Food protection, African Continental Association for Food Protection and Ghana Association of Food Scientist and Technologist. She serves on international and local committees including FAO/WHO Codex Committees responsible for food standards that serve as reference to protect consumer health and international food trade.
